Chocolate chunk mini muffins surrounded by chocolate chunks

Paleo Banana Chocolate Chunk Mini Muffins

appetizers/snacks breakfast dairy-free gluten-free grain-free low-carb Feb 25, 2022

Mmmmmm…muffins. Fresh, warm, banana chocolate chunk mini muffins. They’re the perfect one-biter that makes you feel all warm and happy. So much so, that you reach for another. And another.

Can’t stop. Won’t stop. But that’s ok because these are not your typical high-carb, high-sugar muffins. No way.

These are our favorite Paleo Banana Chocolate Chunk mini muffins. They are super nutritious and super delicious. Permission to have as many as you’d like!

Sugar? Nope! These are naturally sweetened by our secret ingredient: super-ripe bananas. Yes, let those babies get nice and brown, and then they’re ready for baking! (actually, there is a small amount of added sugar from the chocolate, but you can also opt for sugar-free chocolate chips).

We boost the nutritional value of these muffins with some KEY INGREDIENTS: freshly ground flaxseed, collagen peptides, Vital Farms pasture-raised eggs, and almond flour.

These ingredients are high-protein and high-fiber and contain healthy fats. They make our muffins macro-balanced. Really, this recipe is smart eating! It would be more of a shame not to have a few.

And let’s talk about the chocolate. One of our missions is to introduce you to new brands that we love. Our TWO favorite brands of super-clean and delicious chocolate are Hu and Evolved. Both companies use high-quality organic chocolate and are sweetened with coconut sugar. They make chocolate bars, filled chocolate bars, and chocolate chips. The flavors are endless!

Hu’s dark chocolate baking gems are our usual go-to, which are basically chocolate chips on steroids! If you don’t have any around, you can always grab your favorite bar of Hu or Evolved chocolate and chop it up into chunks. It’s so fun when you get to try new products and are THRILLED with the result! We couldn’t wait to share this recipe with you!

Happy Baking! Let us know what you think! Although we already have an idea… and it sounds like, “I can’t get enough!”
