Perfectly Paleo Pancakes

Did someone say pancakes?

Pull up a chair, because we’ve been making these pancakes NONSTOP for the past few days. Why? Well, they’re nutritious. And delicious. And easy to make.

Did we mention they’re nutritious? Gluten-, grain-, and dairy-free. High protein, healthy fats, high fiber, and low carb. Clean burning fuel for your body and brain.

Did we mention they’re delicious? Sweet from the banana and tender from blending the rest of the ingredients. No hockey puck pancakes here.

Did we mention they’re easy? All you need are a few basic ingredients and a blender. Bonus points if you have a flat-top griddle to cook them on.

Here’s what  you need:

—eggs (Vital Farm’s pasture-raised is our preference)

—a banana

—collagen peptides (we like Vital ProteinsFurther Food, and Bulletproof)

—almond flour (we like Bob’s Red Mill but you can use whatever brand you like – and make sure it’s almond flour NOT almond meal)

—freshly ground flax seed (NOTE – please buy whole flax seeds and grind them yourself. We’ve gone into this in detail many times on the blog and on IG and FB. The magic of the flaxseed is once they’re crushed. The problem is, once crushed or ground, they go rancid very quickly. The ground flax you see in the stores is very likely already rancid. The solution: grind them yourself and store them in the refrigerator. We grind enough for one week at a time. Store the whole flax seeds in the refrigerator in an air-tight container to preserve freshness)

—cinnamon

—pure vanilla extract

—virgin coconut oil
