White Bean Chicken Chili

Nothing quite says comfort food quite like a hearty bowl of chili. Packed with protein, veggies, and healthy fat, what could be better?

This isn't your average bowl of chili. Sure, we love a good bowl of red chili (spice level is up to you), but this white chili just takes it in a whole new direction. It's got a whole Mexican food meets chili vibe. Mmm 😋

While this chili recipes isn't exactly low-carb or paleo like most of our other recipes, you can make some adjustments to the recipes to suit your preferences:

  • swap out the beans and quinoa for cauliflower rice
  • don't garnish with sour cream or yogurt - use coconut yogurt or coconut cream instead

Tips to make this chili flavor explode:

  • season aggressively, adding in more spices, salt with each layer of ingredients after they are added the pot
  • taste at the end of cooking and decide if it needs more seasoning
  • Add a squeeze of lime over the top of your bow of chili
