We created this recipe for Clean Eating Magazine and it ran in November 2017. We keep on coming back to this recipe even almost five years later… it’s that good.
Serious comfort food!
But…if you don’t do well with gluten (or grains for that matter) or dairy, then your love affair with lasagna will have you feeling like you just got dumped.
Besides, it really is just a brick of carbs, sauce, and cheese. Traditional lasagna may make you feel bloated and uncomfortably full. That’s no fun for anyone.
Have no fear! We’ve reinvented lasagna so you can continue to love it and have it love you back. Thank goodness.
We’ve swapped out the pasta for zucchini and created a delicious cashew cheese pesto for the cheesy filling! Using zucchini cuts a lot of the calories and ups the nutritional value. Our cashew cheese pesto is tangy, refreshing, savory, and oh so pretty. Mmmmm.
Our lasagna is low carb, paleo, and keto-friendly, and just plain DELICIOUS!
While you can still view this recipe as “comfort food”, AKA just what you need after a long day or an extra cold night, this recipe is now lightened up so you can enjoy it without guilt.
